Even the zuchinni! We had so much it was quite a challage to use it all there for awhile! We use our organic Jimmy peppers in everything that calls for a bell and eat those tasty tiny yellow pear tomatoes like they are going out of style! I am getting redy to go harvest some more grey stripe sunflowers to roast for my hubbys seed splitting needs!ha!
Erin I also am an organic gardener but I only have a very small vegetable garden. I grew zuccini one year and it produced way to much for my family to eat. We spent so much time baking zuccini loaf and going around the neighbourhood trying to give the stuff away that we decided not to grow it anymore. I mainly grow the families favourites now like tomatoes (3 varities), cucumbers and lettuce (several varieties). I also grow alot of herbs and edible flowers. Already looking forward to my first crop of lettuce.
Oh Zucchini! I know what you mean! Really one plant can sustain a family, anything more and WOW! And Lettuce! I just love fresh lettuce! We have the luxury of having plenty of space for huge garden so I have as many varieties as I can get in the dirt! A few evenings ago had wonderful microgreen salad of two kinds of baby spinach, lollo rossa, some speckled one I dare not spell and butter crisp! YUMM! What are your fav lettuce varieties? Also do you trellis you cucs? That could give you lots more space if you do. I trellis here more for air circulation and disease resistance. I am trying peas this year for the first time. I am always to late to get them in because our spring is pretty short around here. The weather seems to go from 35-40 to 90-100 very quickly!
Yes I trellis my cumbers. For all the reasons you mentioned. As far as lettuce varieties my main staples are green leaf lettuce and ruby leaf lettuce (they are the ones my kids will eat). Then I experiment year to year with different varieties like radicchio, endive, mixed seed packs, spinach and some times romaine. My children do not like the bitter ones or heavier textured leaves, but I do besides being really good for you they spice a salad up. In my small garden I prefer the loose leaf varieties. They allow us to starting enjoying them right away and also allow me to plant something else in their spot sooner.
Good point about loose leaves! I started arugula a few years back and LOVE its nutty flavor when picked young or slightly steam/sauted when a bit more mature. They do grow and resow rapidly though! I find babies growing everywhere!
